08 Jan Yummy Healthy Cookies
I love to bake, my husband Peter hates when I have unhealthy baked goods in the house. Today, this was my compromise:
Pecan Cranberry Steel – Cut Oat Cookies
- 3/4 cup butter
- 1 1/2 cups baking stevia
- 1 tablespoon maple syrup
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 3/4 cups spelt flour
- 1/4 teaspoon sea salt
- 2 eggs
- 2 teaspoons pure vanilla extract
- 2 teaspoons ground cinnamon
- 2 cups steel-cut oats
- 3/4 cup chopped pecans
- 3/4 cup dried cranberries
Directions:
-
Preheat oven to 375 degrees.
-
Cream butter.
-
Add stevia, maple syrup, salt, baking powder, baking soda, eggs, vanilla, cinnamon and half the flour. Beat to combine.
-
Beat in the remaining flour.
-
Add oats, pecans and dried cranberriers
-
Drop by rounded teaspoon on cookie sheet.
-
Bake at 375 degrees for 12-15 minutes or until edges are golden brown.
So healthy I didn’t feel the least bit guilty about giving my 4 year old one for dessert. Enjoy.
